Learn every step of the chocolate making process, from growing, fermenting and roasting cacao to grinding, tempering and tasting! Time & Location Sun May 10, 2026, 12:00 PM – 2:00 PM Preserved, 5540 College Ave, Oakland, CA 94618 About the Event In this hands-on workshop, we'll learn how to crack and winnow freshly roasted cacao beans, process those beans using a melanger, and demystify the art of tempering (plus chocolate tastings along the way)! You’ll leave the class with two bars of single origin dark chocolate that you helped to craft. This class is led by Julia Street of J Street Chocolate. Julia's small batch chocolate bars showcase cacao on its own and paired with fermented ingredients and by-products of food production (aka food waste). All students will receive a 10% discount on post-workshop purchases in our store. The minimum age for our workshops is 14 years old.

Preserved is a fermentation-focused kitchen shop and classroom in Oakland’s Rockridge neighborhood, right on the College Ave commercial strip. The front of the space functions as a retail store stocked with pantry staples, preserving tools and general cooking gear, so walking in for a class means passing shelves of jars, baking equipment, vinegars and grains. more...
